Champagne Quinoa Feta and White Corn Side-Salad

This is either a side dish or a salad – goes great with fish. The corn gives it crunch, the feta gives it a salty taste and the quinoa is soft.  If you want to make it a meal either add more veggies or an animal protein.

Ingredients: 

2 Cups of Spring Mix
1 Cup of Arugula
2 Fresh Corn Ears – cut
1 Cup Quinoa 2 cups of water
1 Cup Feta in large pieces (squares)
Champagne Vinaigrette
Sea Salt and Pepper

Champagne Vinaigrette
½ cup of olive oil
1/3 cup champagne vinegar
1 teaspoon mustard
2 tablespoons lemon juice
sea salt and pepper to taste

Directions: 

Cook and Cool Quinoa
Boil Water through Quinoa in and turn off heat and let it sit

Cook and Cool Corn
Cut nibblets off the ears

Mix lettuce’s – add thick chunks of feta, corn, and quinoa on top
Drizzle dressing
