Kale – Edemame – Cranberry – Almond Salad

This salad is a great side dish or can be used to take to lunch on a weekday.  The almonds add a great crunch while the cranberries add flavor and color, the health benefits of this salad are just as wonderful!

Ingredients: 

2 Cup Kale
1/3 Cup Edemame Beans
1/3 Cup Cranberries
1/3 Cup Sliced Almonds
Lemon Crème Dressing

Directions: 

Chop finely the kale. Boil edemame beans and shell. Add all ingredients and mix. Drizzle lightly with the lemon dressing.
